If you are what you eat, most Americans are an ear of corn. A chemical analysis of popular fast foods reveals that some form of the grain appears as a main ingredient in most items—especially beef.

Researchers examined the molecular makeup of hamburgers, chicken sandwiches, and French fries purchased from three fast food chains in six US cities.

"Of the hundreds of meals that we bought there were only 12 servings of anything that did not go straight back to a corn source," said Jahren, a geo-biologist University of Hawaii in Honolulu.

Corn has a unique biochemistry that allows researchers to identify its signature as it passes through the food chain—from plant to animal tissue to cooked human food. Scientist’s used this signature to see if the contents of fast food matched how restaurants' said their foods are made and what ingredients they contain.

Such details from Wendy's, McDonalds, and Burger King were "vague and euphemistic," Jahren said. The team's analysis, however, told a "very simple, straightforward story—it all went back to corn."

French fries are often cooked in corn oil; cows and chickens eat either corn or feed fertilized with corn. Not only was the signature of corn dominant, it was remarkably homogenous across the country in different restaurants.

Subsidized System: Corn's U.S. prevalence is reinforced by a basket of federal subsidies that encourages farmers to specialize in corn production. This has encouraged the meat industry to base their productivity around corn, ratcheting up the overall demand for the grain. The end result is a food system rife with corn which carries a host of health consequences.

Early scientific literature on people eating corn-fed meat instead of grass-fed meat—a more natural food source—is revealing changing the composition of fats in the human diet.

Leaky Cornfields: From an environmental standpoint, the situation isn't much better. Corn receives about 35 percent of all agricultural pesticides and 40 percent of all commercial fertilizer used in the U.S. And since cornfields are "inherently leaky," a lot of these chemicals are lost to the water and air. For instance, nitrogen—which comes from fertilizers—in the form of nitrous oxide is a greenhouse gas 300 times more potent than carbon dioxide.

Pickle-Powered Cramps

The Question: Could pickle juice be key to avoiding debilitating leg cramps and sustaining athletic endurance?

Pickle juice is the liquid substance used to give cucumbers their salty, sour taste. It is usually made of water, salt, calcium chloride and vinegar (acetic acid), and occasionally contains flavorings like dill or “bread and butter”.

The use of pickle juice as a defense against muscle cramps first attracted headlines when the Philadelphia Eagles credited pickle juice with their cramp-free win over the Dallas Cowboys in the over-one-hundred-degrees Texas heat. How this works: Exercise induced muscle cramps are caused by dehydration from exercising in hot weather and not drinking enough fluids. When you sweat during exercise you lose a lot of salt from your blood, aka electrolytes. This loss of electrolytes can cause muscle cramping. 

Cells use electrolytes to maintain voltages across their cell membranes and to carry electrical impulses to other cells; these impulses are responsible for muscle contractions. Pickle juice has a very high salt or electrolyte content. Therefore, drinking pickle juice before exercising could possibly provide your body with enough salt, that your muscles will not cramp.

There is little scientific evidence supporting or refuting the use of pickle juice as a method of preventing muscle cramps.

A Scientific Study compared the pickle juice from Vlasic Pickles to the carbohydrate sports beverage Gatorade. The two beverage samples were analyzed in a food-composition laboratory to determine the amount of salt, potassium, calcium and magnesium in each product. Pickle juice was found to have considerably more salt than the carbohydrate beverage.

The conclusion: Pickle juice can be used as a remedy for muscle cramps. However, the study warns of the danger of ingesting large amounts of salt suggests athletes dilute the pickle juice with a sufficient quantity of a hypotonic or isotonic solution.

C-DIFF Infection

What is C-DIFF
Clostridium difficile (klos-TRID-e-um dif-uh-SEEL), C. difficile or C. diff, is a bacterium that can cause symptoms ranging from diarrhea to life-threatening inflammation of the colon.

Illness from C. difficile most commonly affects older adults in hospitals or in long-term care facilities and typically occurs after use of antibiotic medications. C. difficile infections have become more frequent severe and difficult to treat. http://www.mayoclinic.com/health/c-difficle/DS00736

 Treatments and Drugs
The first step in treating C. difficile is to stop taking the antibiotic that triggered the infection, when possible.


For mild to moderate infection, doctors usually prescribe metronidazole (Flagyl) is not FDA approved for C. difficile infection but has been shown to be effective. Side effects include nausea and a bitter taste in your mouth.

Antibiotics:  Ironically the standard treatment for C. difficile is another antibiotic. These antibiotics keep C. difficile from growing, which treats diarrhea and other complications.

For more severe and recurrent cases, vancomycin (Vancocin) may be prescribed. Another oral antibiotic, fidaxomicin (Dificid). In a study the recurrence rate of C. difficile in people who took fidaxomicin was lower than among those who took vancomycin. Fidaxomicin costs considerably more than metronidazole and vancomycin. Common side effects of vancomycin and fidaxomicin include abdominal pain and nausea.

Surgery: For people with severe pain, organ failure or inflammation of the lining of the abdominal wall, surgery to remove the diseased portion of the colon may be the only option.

Recurrent Infection
Up to 20 percent of people with C. difficile get sick again, either because the initial infection never went away or because they're re-infected with a different strain of the bacteria. Treatment for recurrent disease may include:

Antibiotics: Antibiotic therapy for recurrence may involve one or more courses of a medication (typically vancomycin).

Fecal microbiota transplant (FMT): Also known as a stool transplant, though not yet approved by the FDA, clinical studies of FMT are currently underway. Research has shown FMT has a success rate higher than 90 percent for treating C. difficile infections. One small, randomized, controlled trial stopped early because the results were so positive, with a 94 percent success rate overall.

Probiotics: Probiotics are organisms, such as bacteria and yeast, which help restore a healthy balance to the intestinal tract. ALS and Tonic Herbs

Early symptoms of ALS often include increasing muscle weakness, especially involving the arms and legs, speech, swallowing or breathing.

Prognosis
The progressive degeneration of the motor neurons in ALS eventually leads to their death. When the motor neurons die, the ability of the brain to initiate and control muscle movement is lost.
